3 devices, functionality? And am I doing something wrong?

I am very new to Bluetooth, so please excuse my lack of expertise.
I recently purchased a Motorola E815 Bluetooth phone. Being the gadget
guy that I am, I then rushed out to buy a Bluetooth dongle, and
installed Motorola Mobile Phone Tools on my PC. This was cool, as I
can now sync my Outlook 2003 contacts and calendar with my phone. (I
have some issues with this, in that the names get jumbled around- like
Outlook has a contact of Bob & Jane Smith, and it comes over to the
phone as "last name" Jane Smith "first name" Bob, or something like
that. I figure I need help to learn the mapping scheme, but that's not
my really question to this group.)
So anyway during the installation and fumbling around I discovered
that I could use my PC microphone and speakers to talk on my cell
phone. I thought this was kind of neat, as this would allow me to type
and do PC work, while holding a phone conversation too. And maybe (I
haven't tried to do this yet) allow me to use voice commands to dial
numbers and such. Again, pretty cool.
So next, my Bluetooth headset, a Motorola HS820, arrived. I paired
this with my phone and got that working. And then I thought to add
this device to my PC as well. I thought this might allow me to do
voice chatting online, like in Yahoo IM, with my buddies. And this new
feature would give me the freedom to walk around my apartment,
chatting online.
Now you have the background information (hope I did not bore you to
death). On to my "questions/problems"...
1. I expected that while chatting online (of course using the
Bluetooth headset), that if the phone rang I would hear a beep and be
able to "click over" to the incoming phone call. But this does not
happen. It seems that when my PC and headset are communicating that
this "link" does not allow the phone to be involved. Is this normal,
or have I set up something wrong? I suspect that if all 3 devices
should work together, that I may have incorrectly "paired" them. When
I set up the phone and dongle I used one pairing code, and then when I
paired the phone to the headset I used another paring code. I hope
someone can help me out here, please, and thank you.
2. In fooling around with the headset as a PC listening/talking
device, I also discovered that if I listen to music or play a video on
my PC that the sound comes over the headset. I have not tried any
games yet, but I thought this feature might come in handy when using
my PC and not wanting to disturb my family or neighbors. But I was
only able to make this happen once so far. Later in the day I tried to
play a video, and then "switch over" to headset sound, but could not
seem to accomplish this, as I expected. Perhaps I needed to set up the
PC/headset connection before starting the video? Or is there a method
to change this on the fly?
In typing this I am thinking I could use a "Bluetooth for dummies"
book, if there is such a thing. And also feel like it would be great
if I could just talk to someone who really knows all about this stuff,
but unfortunately do not yet know anyone like that. I hope that
someone in the group can help get me straightened out.
Next to complicate matters even more, I am considering buying a
Bluetooth car kit (perhaps, Motorola IHF1000)! Any other
recommendations?

Generally speaking, you can only have one device active with your bluetooth
headset at a time. So this is normal.
