With the latest upgrade my eTrex Legend Cx can store to a
gpx file (with elevation) on the data card also.

The eTrex does not save go GPX files.

If you import your tracks to your PC you can export from MapSource to GPX
format.

Ouch.

Look into http://www.gpsbabel.org - it should work for you. At least from
what I can read at their homepage.

ok, mps can be GPSBabel can read mps.

But are these files stored on the flashcard and thus readable through a
cardreader?

You need to connect the device using serial cable (or USB) to do so. If you
have the version with memorycard and the right firmware you get the GPX file
directly.
