You can do lots of thing with your tracks.
If you have taken photos you can use your tracks to see where you took them.
You can load your tracks into Googe Earth and see where you went.
If you like statistics you can see your average speed, travelled distance
etc.

You can share it with friends or upload track on internet!
Somebody may load track into his GPS and replay your ride :)

It only be useful if you can use them, like to go back the the same
track's you passed through. My old StreetPilot has it which I didn't
actually use, but kinda miss it when finding out my newer Nuvi 680 doesn't
have it and lacking of few other useful features.

Use them as a basis for building routes to places you'll travel again.
Place waypoints at the major turnings for point to point routes or on
the road changes for autorouting by highway. Then put the waypoints in
a route.
I especially like doing that for the travels made in boats where I did
not run into anything or run aground. If I convert a track like that to
a route, it means I might have the same luck next time.
If you need to keep track of times of arrival or departure or elapsed
times or distances between places you can get all that from the track
data.
Some of this will vary with the GPS model.

Personally I have used tracks to help me remember what time I arrived for a
given service call after doing 4 or 5 in one day. Because it was a busy day
when I got back to my office I could not remember when I got to one place
and then left for the next. Using tracks I was able to write up my service
reports accurately.
Kinda what most others have been saying but in a real world application.
Have a good day.

I use them so I can find the trail again when I hike it in the winter and it is
covered with snow. I can use GPS trackmaker to edit my tracks and make
tracklogs that other people can download onto their GPS units. I can look at
the elevation profile of my track logs and see just how steep my hike was. I do
a screen capture on my track logs and elevation profiles and upload them to my
hiking blog.

There are a lot of sites that let you share tracks or view/use those
of others.
Many are free and include organizations or personal sites
(e.g. http://trailcentral.com or http://geobiking.org or
http://www.railstotrails.org)
* Keep track of your boat trip to get back on your same route to avoid
rocks etc after dark or in fog or on lakes that have many inlets
etc.. (NOTE: if you are using it to avoid underwater/dangerous
obstacles, you really need to create a waypoint for those if they are
anywhere near your route of travel.) Many Garmin units also allow you
to set proximity alarms for waypoints.
* Find your way out of a mess of 4WD or ATV trails that you road all
day.
* Find you way back to where you left your camera when you had lunch
in the woods....
* Use them with software to compare speed/distance etc for a fitness
program.
* Replay your ride via 3D satellite imagery in Google Earth

In the case of bicycling, if you're doing follow the leader (as opposed
to following a cue sheet or map) rides it lets you figure out just where
the leader has led you. The same would be true in hiking as well.

Greatview, this is kinda on the fringe, but you can do art. Like what
you see at:
http://www.gpsdrawing.com/gallery.htm
Also, if you find an interest in working with a lot of track data, I
recommend an application called TopoFusion (topofusion.com). In
addition to supporting the GPx eXchange file format and displaying
data on hybrid sat and topo maps, TopoFusion has a sophisticated
algorithm for combining and simplifying tracks, especially overlapping
tracks. That is, it determines nodes and segments from your data,
creating a "network". This is very helpful for making trail maps from
piece-meal track data collected over time from various sources.
TopoFusion also has another really cool feature which lets you
visualize multiple tracks recorded by GPS simultaneously with multi-
track playback (great for reviewing races).
I hope this helps!
