Is there any means by which this can be switched off? when I have
completed a walk it keeps racking up time etc., can this be stopped
without resetting?

No while the gps is on it will always add more time until you turn
unit off or put it in use with gps off mode.

It can't be switched off but that field can be changed to something more
useful. I changed mine moving time. There are a lot of choices from
the Change Data Fields menu.

The other alternative is to use the 60/76C stopwatch as a kind of trip
counter, keeping in mind that once the gps is turned off all the data
is lost. But I still find the stopwatch useful as it allows you to
have a way of keeping track of other things. Say when I go out
geocaching, as long as I remember, I can start the stopwatch each time
I get out of the car and walk to a cache and shot it off again when I
get back into the car, and that way the actual walking part is
recorded separately from the total trip computer data.

I just wish the data wasn't lost when you shut the gps off though.

Another minor problem with the stopwatch is the lap timer. When I
actually use the stopwatch to time a race or track session, I can only
go back two laps to see what the time was. Even my cheap Timex
Triathlon has an 8 lap memory.

Garmin - can you hear me? I have suggested these through the normal
channels.

I just realised we missed a bet. The 60 range has a setting for when it
adds another breadcrumb: you can tell it to add them either when a certain
amount of time has passed or when you have moved a certain distance. So
if you want it to stop adding points when you've completed a walk, use the
setting that only adds points when you're moving.

For the most part, GPS receivers never quit moving. Every time it
generates a new fix (once a second or so) it adds the distance from the
last fix to the new one to your distance traveled. It is not far but it
adds up.

One of the last things I do before I go anywhere is reset everything on
the trip computer page and clear the track memory.

The OP mentioned time, not distance as one of the variable he wanted
to stop so I still think the stopwatch function works best for this.
