I've seen lots of talking of roaming in the USA and getting a phone that
supports GSM 1900, but if I was to get a phone over there that supported
GSM 1900 and 850 would I be able to roam on 850 with the UK SIM?

Yes. cingular uses 850 in much of their area rather than 1900 though
cingular took over the AT&T Wireless network. That network had 1900
throughout so theoretically anywhere that the former AT&T Wireless
network was available you should have coverage at 1900. If your
operator has a roaming agreement with T-Mobile they are only 1900.
T-Mobile has decent coverage in built up areas (cities, suburbs and
the highways connecting them.) If you're going into rural areas 850
may be useful to you. If not then it's arguable as to how valuable it
is for you.
